Instructions

    In a large pot, heat a splash of water or broth over medium heat. Add the diced onion and garlic, sautéing until softened (about 3-4 minutes).

    Add the lean pork pieces to the pot, cooking until browned on all sides (about 5-7 minutes).

    Stir in the chili powder, cumin, salt, and pepper, cooking for another minute to release the spices' flavors.

    Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.

    Add the hominy, reduce heat, and let it simmer for 20 minutes, allowing the flavors to meld.

    Serve hot, garnished with shredded cabbage, sliced radishes, diced avocado, and fresh cilantro.
