Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add sliced pork and cook until browned, about 5-7 minutes.
3.
Stir in the sliced bell peppers and onions, cooking for another 5 minutes until softened.
4.
Add chili powder, cumin, garlic powder, salt, and pepper. Mix well and cook for an additional 2-3 minutes.
5.
If using, stir in fresh spinach until wilted, about 1 minute.
6.
Serve warm in whole grain tortillas or on a plate.

1 medium onion, sliced
