Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a food processor, combine the peanuts, dates, cocoa powder (if using), vanilla extract, and salt. Blend until the mixture is crumbly but holds together when pressed.
3.
In a large bowl, whisk the egg whites until frothy.
4.
Fold the peanut-date mixture into the egg whites until well combined.
5.
Line a baking dish with parchment paper and pour the mixture into it, spreading it evenly.
6.
Bake for 20 minutes or until set. Let it cool completely before cutting into bars.

1 cup dates, pitted

1/4 cup unsweetened cocoa powder (optional for chocolate flavor)
