Instructions
1.
In a large mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Mix until smooth.

Add the rolled oats, pumpkin seeds, cocoa powder (if using), and salt to the yogurt mixture. Stir until well combined.
3.
Line a baking dish with parchment paper and pour the mixture into the dish, spreading it evenly.
4.
Refrigerate for at least 2 hours to allow the bars to set.
5.
Once set, cut into bars and enjoy!
