Instructions
1.
1. Preheat a non-stick skillet over medium heat and spray with olive oil.
2.
2. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally until tender.
3.
3. Add diced onion and bell peppers to the skillet and cook for an additional 5 minutes until softened.
4.
4. In a separate bowl, whisk the egg whites and season with salt and pepper.
5.
5. Pour the egg whites into the skillet with the vegetables and cook until set, about 3-4 minutes.
6.
6. Sprinkle low-fat cheese on top and cover the skillet for 1-2 minutes until melted.
7.
7. Serve with fresh blackberries on the side.
