Instructions
1.
In a large mixing bowl, combine rolled oats, protein powder, chia seeds, shredded coconut, and salt. Mix well.
2.
In a separate bowl, mix together the peanut butter, honey, and vanilla extract until smooth.
3.
Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, fold in the dark chocolate chips.
4.
Press the mixture into a lined baking dish evenly. Refrigerate for at least 30 minutes to set.
5.
Once set, cut into bars or squares and enjoy your healthy protein snacks!
