Instructions
1.
Heat avocado oil in a skillet over medium heat (2 minutes).

Add sliced mushrooms and sauté until soft (about 5 minutes).
3.
In a separate bowl, mix shredded chicken, sautéed mushrooms, and cheese.
4.
Place a tortilla in the skillet, add the chicken mixture, and top with another tortilla (1 minute).
5.
Cook until golden brown on both sides (about 3 minutes each side).
6.
Remove from heat, slice into quarters, and serve with cucumbers and tomatoes.
