Instructions
1.
In a mixing bowl, combine the low-fat Greek yogurt and vanilla extract (if using).
2.
Add the chia seeds and mix well to incorporate.
3.
Gently fold in the mixed berries, being careful not to mash them.
4.
If desired, drizzle honey or maple syrup over the top for added sweetness.
5.
Serve immediately in bowls or store in the refrigerator for up to 2 days.
