Instructions
1.
Boil a large pot of salted water. Add the pumpkin ravioli and cook according to package instructions (about 4-5 minutes).
2.
While the ravioli cooks, heat olive oil in a large skillet over medium heat.
3.
Add chopped spinach to the skillet and sauté for 2-3 minutes until wilted.
4.
In a bowl, mix ricotta cheese, black pepper, nutmeg, and salt to taste.
5.
Once the ravioli is cooked, drain and add it to the skillet with spinach. Gently toss to combine.
6.
Add the ricotta mixture to the skillet and stir until everything is well combined and heated through (about 2 minutes).
7.
Serve warm, topped with grated Parmesan cheese if desired.
