Instructions
1.
Prepare the quinoa according to package instructions and let it cool (about 15 minutes).

In a large bowl, combine the cooked quinoa, shredded chicken, arugula, onion, tomato, and chia seeds.
3.
In a small bowl, mix the stone ground mustard and low-fat mayonnaise. Add this dressing to the quinoa mixture and toss to combine.
4.
Lay out the whole grain wraps and evenly distribute the quinoa and chicken mixture onto each wrap.
5.
Roll the wraps tightly, tucking in the sides as you go to secure the filling.
6.
Serve with baby carrots and hummus on the side.
