Instructions
1.
1. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy and water is absorbed.

2. While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent, about 5 minutes.

3. Add the braised cabbage to the skillet and stir in the tomato sauce. Season with salt, pepper, and your choice of spices. Cook for an additional 10 minutes, allowing the flavors to meld.

4. In a separate pan, fry the eggs to your liking (sunny-side up or over-easy).

5. To serve, divide the quinoa among four bowls, top with the braised cabbage mixture, and place a fried egg on top of each bowl.
