Instructions

  • 1.

    In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent (about 5 minutes).

  • 2.

    Add the rinsed quinoa, lentils, vegetable broth (or water), diced tomatoes, cumin, paprika, salt, and pepper. Stir well.

  • 3.

    Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

  • 4.

    After 20 minutes, add the chopped spinach and green beans. Stir and cook for an additional 5-10 minutes until the vegetables are tender.

  • 5.

    Finally, stir in the chickpeas and heat through for another 2-3 minutes. Adjust seasoning if necessary.

    2 cups vegetable broth or water

    2 cups fresh spinach, chopped

    1 cup green beans, trimmed and chopped

  • 6.

    1 can (15 oz) chickpeas, drained and rinsed

  • 7.

    1 can (14.5 oz) diced tomatoes, with juices

  • 8.

    1 onion, diced

  • 9.

    2 cloves garlic, minced

  • 10.

    1 tsp cumin

  • 11.

    1 tsp paprika

  • 12.

    Salt and pepper to taste

  • 13.

    1 tbsp olive oil
