Instructions
1.
In a medium pot, bring the vegetable broth or water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.

In a large skillet, heat a splash of water or a small amount of olive oil over medium heat. Add the sliced mushrooms and sauté for 5 minutes until they are tender.

Add the peas, broccoli, carrots, and corn to the skillet. Cook for another 5-7 minutes until the vegetables are tender but still vibrant.

Stir in the cooked quinoa, spring onions, and beetroot. Mix well and season with salt and pepper to taste.

In a small bowl, combine the yogurt, honey (if using), and cinnamon. Serve the quinoa mixture topped with a dollop of the yogurt mixture and a sprinkle of mixed nuts and seeds.
