Instructions
1.
1. In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is fluffy. (15 minutes)

2. While quinoa cooks, prepare the vegetables: dice cucumber, chop red onion, and yellow bell pepper. (5 minutes)

3. In a large bowl, combine cooked quinoa, diced vegetables, chickpeas, and sliced pork tenderloin. (5 minutes)

4. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine. (2 minutes)

5. Serve immediately or refrigerate for later. Garnish with fresh herbs before serving.
