Instructions
1.
1. Cook the quinoa: In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and let cool.

2. Prepare the pork: Preheat grill or skillet over medium-high heat. Rub pork tenderloin with olive oil, cumin, garlic, salt, and pepper. Grill for about 15-20 minutes, turning occasionally, until cooked through. Let rest before slicing.

3. Combine the salad: In a large bowl, mix the cooled quinoa, cherry tomatoes, cucumber, bell pepper, spinach, red onion, and parsley.

4. Dress the salad: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste. Toss to combine.

5. Serve: Plate the quinoa salad and top with sliced grilled pork tenderloin.
