Instructions

  • 1.

    Rinse the quinoa under cold water. In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside. (Approx. 20 minutes)

  • 2.

    In another pot, bring 1 cup of water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. (Approx. 10 minutes)

  • 3.

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

  • 4.

    Add shrimp to the skillet, season with paprika, salt, and pepper. Cook for 3-4 minutes on each side until shrimp are pink and cooked through.

  • 5.

    Stir in chopped spinach and lemon juice, cooking for an additional 2 minutes until spinach is wilted.

  • 6.
