Instructions
1.
Preheat your oven to 400°F (200°C).

Toss the diced sweet potatoes, broccoli, red bell pepper, and mushrooms in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.

While the vegetables are roasting, cook the quinoa according to package instructions.
4.
In a small pot, boil water and gently add the eggs. Boil for 10 minutes for hard-boiled eggs, then cool in ice water and peel.
5.
Once the quinoa is cooked, mix in the black beans and salsa.
6.
To serve, layer the quinoa mixture in bowls, top with roasted vegetables, flake the tuna on top, and add sliced hard-boiled eggs.

1 cup broccoli florets

1 red bell pepper, diced

1 cup mushrooms, sliced

1 can black beans, rinsed and drained

1 can tuna in water, drained

2 large eggs
9.
1/2 cup salsa

1 tablespoon olive oil

Salt and pepper to taste
