Instructions
1.
In a bowl, mix the cooked quinoa with shredded pulled pork, diced onion, and spinach (if using). Season with salt and pepper.
2.
Spread the low-fat mayonnaise on the whole grain wrap.
3.
Layer the quinoa mixture on the wrap, followed by avocado slices.
4.
Roll the wrap tightly, folding in the sides as you go to secure the filling.
5.
Slice in half and serve immediately.

1 whole grain wrap or tortilla

1/4 avocado, sliced
