Instructions
1.
In a pot, combine red lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until lentils are soft. (15-20 minutes)

While lentils are cooking, preheat the oven to 400°F (200°C). (5 minutes)

Toss sliced carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender. (20-25 minutes)

In a skillet, heat a little olive oil over medium heat. Season chicken pieces with paprika, salt, and pepper. Cook until golden brown and cooked through, about 10-12 minutes. (10-12 minutes)

Once lentils are cooked, drain any excess water and blend with garlic, olive oil, lemon juice, cumin, salt, and pepper until smooth. (5 minutes)
6.
Serve the red lentil hummus with roasted carrots and chicken bites, garnished with fresh parsley.
