Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, salt, and pepper until well coated.

Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown and tender, flipping halfway through.

While the cauliflower is roasting, bring the vegetable broth or water to a boil in a saucepan. Add the red lentils and reduce the heat to a simmer. Cook for about 15-20 minutes, or until the lentils are tender and the liquid is absorbed.
5.
In the last 10 minutes of cooking, add the green beans to the baking sheet with the cauliflower to roast them together.
6.
Once everything is cooked, assemble your bowl by placing a scoop of lentils at the bottom, topped with roasted cauliflower and green beans.
7.
Garnish with fresh mint leaves and pumpkin seeds before serving.
