That looks so delicious! I love roasted salmon. What a great meal truly mouth watering. And dont get me started on the apples they are a great way to add something both sweet and healthy. Its great to see that you managed to cook such an amazing meal between all the unpacking. Good job!!

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the halved baby potatoes and sliced bell peppers with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.

  • 3.

    Spread the potatoes and peppers on a baking sheet and roast for 15 minutes.

  • 4.

    While the vegetables are roasting, season the salmon fillets with salt, pepper, and any additional herbs you like.

  • 5.

    After 15 minutes, remove the baking sheet from the oven and push the vegetables to the sides. Place the salmon fillets in the center.

  • 6.

    Drizzle the remaining olive oil over the salmon and return the baking sheet to the oven. Roast for an additional 15 minutes, or until the salmon is cooked through.

  • 7.

    In a skillet, sauté the sliced onion in a little olive oil until translucent. Add the chopped kale and dried cranberries, cooking until the kale is wilted.

  • 8.

    Serve the roasted salmon with the vegetables and the sautéed kale mixture on the side.

    4 salmon fillets (about 4-6 oz each)

    2 cups mixed bell peppers (red, yellow, green), sliced

  • 3.

    2 cups baby potatoes, halved

  • 4.

    2 cups kale, chopped

  • 5.

    1/2 cup dried cranberries (unsweetened)

  • 6.

    1 medium onion, sliced

  • 7.

    2 tablespoons olive oil

  • 8.

    1 teaspoon garlic powder

  • 9.

    1 teaspoon paprika

  • 10.

    Salt and pepper to taste
