Instructions
1.
In a large bowl, combine the shredded rotisserie chicken, chopped romaine lettuce, steamed broccoli, and diced beets.

In a small bowl, mix the Greek yogurt, lemon juice, salt, and pepper to create a light dressing.

Pour the dressing over the salad and toss gently to combine all ingredients.

Top with sunflower seeds and croutons if using.

Serve immediately or refrigerate for up to 2 hours before serving.
