Instructions
1.
Preheat your oven to 400°F (200°C).

Toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Place them cut-side down on a baking sheet and roast for 20 minutes.

While the sweet potatoes are roasting, prepare the salmon. Rub the salmon fillets with the remaining olive oil, garlic powder, paprika, salt, and pepper.
4.
After the sweet potatoes have roasted for 20 minutes, add the asparagus to the baking sheet. Place the salmon fillets on top of the asparagus.
5.
Return the baking sheet to the oven and roast for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
6.
Remove from the oven and let cool slightly. Serve with diced avocado on the side and a squeeze of fresh lemon juice if desired.

4 salmon fillets (about 4-6 oz each)

1 lb asparagus, trimmed

2 ripe avocados, diced
4.
2 medium sweet potatoes, scrubbed and halved

2 tablespoons olive oil
6.
1 teaspoon garlic powder

1 teaspoon paprika
8.
Salt and pepper to taste
9.
Fresh lemon juice (optional, for serving)
