Instructions
1.
1. Cook the brown rice according to package instructions (about 20 minutes).

2. While the rice is cooking, preheat your oven to 400°F (200°C).
3.
3. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper.

4. Place the salmon fillets on a baking sheet lined with parchment paper and brush with the olive oil mixture.
5.
5. Arrange the broccoli florets around the salmon on the baking sheet, drizzling with any remaining olive oil mixture.
6.
6. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
7.
7. Serve the salmon and broccoli over a bed of brown rice, garnished with red pepper flakes if desired.

4 salmon fillets (about 4-6 oz each)

2 cups broccoli florets

1 cup brown rice (uncooked)

2 tablespoons olive oil

2 cloves garlic, minced

Optional: red pepper flakes for heat
