Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a small bowl, mix the Dijon mustard and maple syrup until well combined.

  • 3.

    Place the salmon fillets on a lined baking sheet and brush the mustard-maple mixture over the top of each fillet.

  • 4.

    Season with salt, pepper, and optional garlic powder.

  • 5.

    Bake the salmon in the preheated oven for 15-20 minutes, or until cooked through and flaky.

  • 6.

    While the salmon is baking, rinse the brown rice under cold water and cook it in vegetable broth according to package instructions (about 20 minutes).

  • 7.

    In the last 5 minutes of cooking the rice, steam the broccoli florets until tender (about 5 minutes).

  • 8.

    Serve the baked salmon alongside the dirty rice and steamed broccoli.

    1 cup brown rice (or quinoa for a higher fiber option)

    2 cups low-sodium vegetable broth (for cooking rice)

    4 cups broccoli florets

    1 tablespoon olive oil

  • 8.

    Salt and pepper to taste

  • 9.

    Optional: 1 teaspoon garlic powder or fresh minced garlic
