Salmon riced cauliflower and white rice again. I wont use white rice in the future but thats all I had this time.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, mix the riced cauliflower with olive oil, minced garlic, lemon juice, salt, and pepper. Spread it evenly on a baking sheet.

  • 3.

    Place the salmon fillets on top of the cauliflower rice. Season with additional salt and pepper.

  • 4.

    Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  • 5.

    If using spinach, add it to the baking sheet during the last 5 minutes of cooking to wilt it.

  • 6.

    Serve hot, garnished with fresh herbs.

    4 salmon fillets (about 4-6 oz each)

    4 cups riced cauliflower

  • 3.

    2 tablespoons olive oil

    2 cloves garlic, minced

    1 teaspoon lemon juice

  • 7.

    1 cup spinach (optional for added fiber)

  • 8.

    Fresh herbs (like dill or parsley) for garnish
