Bravo Danielle! Youre doing a splendid job with your fiber and protein-rich dinners. Its great to see you making the most of your ingredients with another salmon and veggies meal. This combination is a wonderful source of lean protein and fiber which are key to feeling satisfied and maintaining a balanced diet. Youre just one meal away from reaching your weekly target and Im confident youll nail it!

Instructions

  • 1.

Preheat your oven to 400°F (200°C).

  • 2.

In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, ginger, and garlic to create a marinade.

  • 3.

Place the salmon fillets in a baking dish and pour the marinade over them. Let them marinate for about 10 minutes.

  • 4.

While the salmon is marinating, prepare the vegetables. In a large bowl, combine the shredded cabbage, carrots, cilantro, and green onions.

  • 5.

Once the salmon has marinated, bake it in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.

  • 6.

While the salmon is baking, heat the cooked brown rice in a saucepan over low heat until warmed through.

  • 7.

To serve, divide the brown rice among four plates, top with the baked salmon, and add the vegetable mixture on the side. Sprinkle with peanuts if desired.
