Instructions
1.
Preheat your oven to 400°F (200°C).

In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, ginger, and garlic to create a marinade.

Place the salmon fillets in a baking dish and pour the marinade over them. Let them marinate for about 10 minutes.
4.
While the salmon is marinating, prepare the vegetables. In a large bowl, combine the shredded cabbage, carrots, cilantro, and green onions.
5.
Once the salmon has marinated, bake it in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.
6.
While the salmon is baking, heat the cooked brown rice in a saucepan over low heat until warmed through.
7.
To serve, divide the brown rice among four plates, top with the baked salmon, and add the vegetable mixture on the side. Sprinkle with peanuts if desired.

1/2 cup chopped cilantro

1/4 cup chopped green onions

1/4 cup unsalted peanuts (optional)

2 tablespoons low-sodium soy sauce or tamari
9.
1 tablespoon sesame oil
10.
1 tablespoon rice vinegar
11.
1 teaspoon ginger (grated)
12.
1 teaspoon garlic (minced)
