Instructions
1.
1. Preheat your oven to 400°F (200°C).

2. In a large skillet, heat olive oil over medium heat. Add broccoli florets and sauté for about 5-7 minutes until tender and slightly crispy. Season with salt and pepper.

3. While the broccoli cooks, prepare the cauliflower rice. Steam or microwave the riced cauliflower until tender, about 5 minutes. Set aside.

4. In a bowl, mix the fat-free cream or yogurt with chopped artichokes, spinach, salt, and pepper.

5. Place the salmon fillets on a baking sheet lined with parchment paper. Top each fillet with the spinach-artichoke mixture and arrange the shrimp around them.

6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the shrimp are pink and opaque.
7.
7. Serve the salmon and shrimp over a bed of cauliflower rice, with sautéed broccoli on the side. Garnish with lemon wedges.

1 lb shrimp, peeled and deveined

2 cups fresh spinach

1 can (14 oz) artichoke hearts, drained and chopped

1 cup fat-free cream or yogurt

1 head cauliflower, riced

2 cups broccoli florets

1 tablespoon olive oil
9.
Salt and pepper to taste

Lemon wedges for serving
