Pic of fish florentine. Low carbs goal sounds good. Next week goal: let go buying real ice crm and chocolate snacks. If I was really diligent. . .I wouldnt let my husbands preference for real ice crm influence what I buy our eat!!

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add minced garlic and sauté for 1 minute until fragrant.

  • 3.

    Place salmon fillets in the skillet, season with salt, pepper, and dried herbs. Cook for 4-5 minutes on each side until cooked through.

  • 4.

    Remove salmon and set aside. In the same skillet, add spinach and cook until wilted (about 2-3 minutes).

  • 5.

    Stir in low-fat cream and lemon juice, mixing well. Return salmon to the skillet and coat with the sauce.

  • 6.

    Serve warm, garnished with additional herbs if desired.

    4 salmon fillets (about 4-6 oz each)

    4 cups fresh spinach

  • 3.

    1 cup low-fat cream or dairy-free alternative

  • 4.

    2 cloves garlic, minced

    Salt and pepper to taste

  • 7.

    1 teaspoon lemon juice

  • 8.

    1 teaspoon dried herbs (like dill or thyme)
