Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add minced garlic and sauté for 1 minute until fragrant.
3.
Season salmon fillets with salt, pepper, and dried herbs, then place them in the skillet. Cook for 4-5 minutes on each side until cooked through.

Remove the salmon and set aside. In the same skillet, add spinach and cook until wilted (about 2-3 minutes).
5.
Stir in the low-fat cream and lemon juice, mixing well. Return the salmon to the skillet and coat with the sauce.
6.
Serve hot, garnished with additional herbs if desired.

4 salmon fillets (about 4-6 oz each)

4 cups fresh spinach

1 cup low-fat cream or dairy-free alternative

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried herbs (like dill or thyme)
