Instructions
1.
Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
2.
Add the salmon to the skillet and cook for about 4-5 minutes on each side, or until cooked through. Remove from the skillet and set aside.
3.
In the same skillet, add the chopped red bell pepper and scallions. Sauté for 2-3 minutes until softened.

Add the spinach and cook until wilted, about 2 minutes.

In a small bowl, mix the non-fat cream cheese, half-and-half, and Parmesan cheese until smooth. Pour this mixture into the skillet with the vegetables and stir until heated through.

Serve the sautéed spinach and pepper mixture on a plate, topped with the salmon fillet. Drizzle with the creamy sauce.
7.
On the side, serve half an avocado drizzled with balsamic vinegar and lemon wedges for garnish.

1/2 cup scallions, sliced

1/4 cup grated Parmesan cheese

1 tablespoon olive oil
9.
Salt and pepper to taste

1 avocado, halved

1 teaspoon balsamic vinegar
12.
Lemon wedges for serving
