Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.

  • 3.

    While the sweet potatoes are roasting, rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed. Fluff with a fork.

  • 4.

    In a skillet, heat the remaining tablespoon of olive oil over medium heat. Season the salmon fillets with salt and pepper, then cook for about 4-5 minutes on each side until cooked through.

  • 5.

    In a large bowl, layer the mixed lettuce, cooked quinoa, roasted sweet potatoes, corn, and salmon. Drizzle with lemon juice before serving.
