Salmon burger topped with avocado and a small amount of light mayo on a single piece of oatmeal bread. Served with a small side of birds nest mixture. I found I sort of had to push myself to eat after the workout but I feel a bit rejuvenated

Great choice Bradley Its great to see you pushing yourself to eat after a workout as its important to refuel your body. Remember its all about balance. Keep this momentum going!

Instructions

  • 1.

    In a large bowl, combine the salmon fillets, breadcrumbs, chopped onion, parsley, and beaten egg. Season with salt and pepper. Mix until well combined. (5 minutes)

  • 2.

    Form the mixture into 4 patties. (5 minutes)

  • 3.

    Heat a non-stick skillet over medium heat and lightly grease it. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through. (10 minutes)

  • 4.

    Toast the oatmeal bread slices in the same skillet for added flavor. (2-3 minutes)

  • 5.

    Assemble the burgers by spreading a thin layer of light mayo on the bread, placing the salmon patty on top, and adding avocado slices. Serve with lemon wedges.

    4 salmon fillets (about 4 oz each)

    1/2 cup breadcrumbs (preferably whole grain)

  • 3.

    1/4 cup finely chopped onion

    1/4 cup chopped fresh parsley

  • 5.

    1 egg (lightly beaten)

  • 6.

    1 avocado (sliced)

  • 7.

    4 slices of oatmeal bread

  • 8.

    2 tablespoons light mayonnaise

  • 9.

    Salt and pepper to taste

  • 10.

    Lemon wedges for serving
