Instructions
1.
1. In a bowl, mash the salmon fillets with a fork until flaky.

2. Add the black beans, diced avocado, olive oil, lemon juice, salt, and pepper. Mix until well combined.

3. Form the mixture into patties (about 4 patties).

4. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
5.
5. While the patties are cooking, prepare the salad by combining arugula, green lettuce, diced tomato, and sliced cucumber in a large bowl.
6.
6. Serve the salmon patties on a bed of the salad.

2 salmon fillets (about 6 oz each), skinless and boneless

1/2 cup black beans, rinsed and drained

1/4 avocado, diced
4.
2 cups arugula
5.
2 cups green lettuce, chopped
6.
1 medium tomato, diced
7.
1/2 English cucumber, sliced
8.
1 tablespoon olive oil
9.
1 teaspoon lemon juice
10.
Salt and pepper to taste
