Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
3.
Place the salmon fillets on a baking sheet lined with parchment paper.
4.
Brush the salmon with the olive oil mixture, ensuring it's well coated.
5.
Arrange the broccolini and rainbow carrots around the salmon on the baking sheet.
6.
Drizzle any remaining olive oil mixture over the vegetables.
7.
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
8.
Remove from the oven and let it rest for a few minutes.
9.
Top with fried onions before serving.

2 cups rainbow carrots, sliced

1/2 cup fried onions (optional, for topping)
