Instructions
1.
1. Heat olive oil in a large skillet over medium heat. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.

2. Add the salmon fillet to the skillet, season with salt and pepper, and cook for about 4-5 minutes on each side until cooked through. Remove from skillet and flake into pieces.

3. In the same skillet, add mixed vegetables and cook for 3-4 minutes until tender.

4. Stir in cauliflower rice and soy sauce, cooking for another 5 minutes until heated through.

5. Push the rice mixture to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix them into the rice.

6. Finally, fold in the flaked salmon and cook for an additional 2 minutes. Garnish with parsley or green onions before serving.

1 cup mixed vegetables (carrots, peas, bell peppers)

2 tablespoons low-sodium soy sauce

1 tablespoon olive oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced
9.
Salt and pepper to taste
10.
Fresh parsley or green onions for garnish
