Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, mix the lemon juice, olive oil, salt, and pepper. Marinate the salmon fillets in this mixture for about 10 minutes.

Place the marinated salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, prepare the salad. In a large bowl, combine the mixed greens, lemon zest, and croutons. Toss gently to combine.

Once the salmon is done, serve it on a plate alongside the salad. Sprinkle with Parmesan cheese if desired.
