Youve successfully hit your weekly target of incorporating fiber and lean protein-rich lunches. Your choice of sourdough with cream cheese and salmon paired with baby carrots and hummus is a great example of a balanced meal. Fantastic work!!

Instructions

  • 1.

    Spread 1 oz of low-fat cream cheese on each slice of whole grain or sourdough bread (2 minutes).

  • 2.

    Layer 2 oz of smoked salmon on top of the cream cheese on each sandwich (2 minutes).

  • 3.

    Add a handful of fresh spinach on top of the salmon for extra fiber (1 minute).

  • 4.

    Serve with a side of baby carrots and a dollop of hummus for dipping (5 minutes).

  • 5.

    Enjoy your healthy salmon sandwich with a balanced side of veggies!
