Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes.

In a large skillet, heat the remaining olive oil over medium heat. Add the onion and garlic, sautéing until translucent (about 3-4 minutes).

Add the zucchini, bell peppers, and broccoli to the skillet. Cook for another 5-7 minutes until the vegetables are tender.

Season the vegetables with salt, pepper, and dried herbs.
6.
Push the vegetables to one side of the skillet and add the sea bass fillets. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.
7.
Serve the sea bass alongside the roasted sweet potatoes and sautéed vegetables.
