Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add the sliced bell peppers and broccoli florets. Sauté for about 5 minutes until they start to soften.

3. Stir in the cauliflower rice, garlic powder, paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

4. In a separate pan, grill the shrimp over medium-high heat for about 2-3 minutes on each side until they are pink and cooked through.

5. In the same pan as the shrimp, crack the eggs and cook sunny-side up or to your preference.

6. To make the sauce, mix Greek yogurt with a pinch of salt and pepper.

7. Serve the cauliflower rice and vegetables topped with grilled shrimp, a fried egg, and a drizzle of Greek yogurt sauce. Garnish with chopped green onions.
