Instructions

  • 1.

    In a skillet, heat olive oil over medium heat. Add shrimp and season with salt and pepper. Cook for 3-5 minutes until shrimp are pink and opaque.

  • 2.

    In a large bowl, combine diced avocado, cucumber, jalapeño, cilantro, and basil.

  • 3.

    Add the cooked shrimp to the bowl and drizzle with lime juice. Toss gently to combine.

  • 4.

    Serve immediately or chill in the refrigerator for 30 minutes for a refreshing salad.

    1/4 cup fresh basil, chopped

  • 8.

    Salt and pepper to taste
