Cauliflower fried rice/peppers/grilled shrimp/Greek yogurt Yum Yum sauce/ kombucha

Grilled shrimp is a fantastic source of lean protein. The cauliflower fried rice and peppers add a nice touch of fiber-rich foods to your meal. And the sauce is a nice way to add a bit of healthy fats. Kombucha is a great choice for a low-sugar drink. Youre doing good!

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add the diced bell peppers and peas, sautéing for 3-4 minutes until tender.

  • 3.

    Push the vegetables to one side of the skillet and add the shrimp. Cook for 3-4 minutes until shrimp are pink and opaque.

  • 4.

    Add the riced cauliflower to the skillet, mixing everything together. Stir in the garlic powder, onion powder, soy sauce, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

  • 5.

    In a separate pan, scramble the beaten eggs until fully cooked, then mix them into the fried rice.

  • 6.

    For the Yum Yum sauce, mix Greek yogurt, sriracha, and lemon juice in a small bowl.

  • 7.

    Serve the shrimp fried rice topped with a dollop of Yum Yum sauce.

    1 cup mixed bell peppers, diced

    1 cup peas (fresh or frozen)

    1 pound shrimp, peeled and deveined

    2 large eggs, beaten

    2 tablespoons low-sodium soy sauce

  • 7.

    1 tablespoon olive oil

  • 8.

    1 teaspoon garlic powder

  • 9.

    1 teaspoon onion powder

  • 10.

    Salt and pepper to taste

  • 11.

    1/2 cup Greek yogurt (for Yum Yum sauce)

  • 12.

    1 tablespoon sriracha (optional, for Yum Yum sauce)

  • 13.

    1 tablespoon lemon juice (for Yum Yum sauce)
