Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add the diced bell pepper and sauté for 3-4 minutes until softened.

  • 3.

    Stir in the shrimp, garlic powder, cumin, salt, and pepper. Cook for 4-5 minutes until shrimp are pink and cooked through.

  • 4.

    Add the chopped spinach and halved cherry tomatoes to the skillet. Cook for an additional 2 minutes until spinach is wilted.

  • 5.

    Warm the whole wheat tortillas in a separate pan or microwave for about 30 seconds.

  • 6.

    Assemble the tacos by placing the shrimp mixture on the tortillas and topping with tomato salsa.
