Instructions

  • 1.

    In a large skillet, heat the olive oil over medium heat (about 2 minutes).

    Add the cooked lentils and barley to the skillet, stirring to combine (about 3 minutes).

  • 3.

    Pour in the sugar-free sloppy joe sauce and mix well. Cook until heated through (about 5 minutes).

  • 4.

    Meanwhile, steam the broccoli florets until tender (about 5 minutes).

  • 5.

    Toast the whole wheat sandwich thins lightly (about 2 minutes).

  • 6.

    Assemble the sandwiches by placing the sloppy joe mixture on the bottom half of each sandwich thin, topping with the other half.

  • 7.

    Serve with steamed broccoli on the side.
