Instructions

Preheat your oven to 400°F (200°C).

Toss the sliced carrots and yellow bell pepper with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.

In a large skillet, sauté the kale with a splash of water over medium heat until wilted, about 5 minutes.

In a bowl, layer the cooked brown rice, roasted vegetables, sautéed kale, corn, and sliced smoked beef.
