Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add the sliced mushrooms and sauté for 5 minutes until they are golden brown.

  • 3.

    Add the green beans and cook for another 5 minutes until tender-crisp.

  • 4.

    Stir in the fresh spinach and cook until wilted (about 2 minutes).

  • 5.

    In a separate pan, scramble the egg whites until fully cooked (about 3-4 minutes).

  • 6.

    Combine the sautéed vegetables with the cooked wheat berries in a large bowl.

  • 7.

    Top with scrambled egg whites and smoked salmon slices.

  • 8.

    Sprinkle with Romano cheese, salt, and pepper to taste before serving.
