Instructions
1.
Cook the soba noodles according to package instructions, then drain and rinse under cold water. (5 minutes)
2.
In a large skillet, heat sesame oil over medium heat. Add the cubed tempeh and cook until golden brown, about 5-7 minutes.

Add the leeks, mushrooms, and yellow squash to the skillet. Sauté for 3-4 minutes until softened.

Stir in the broccoli and spinach, cooking until just wilted, about 2 minutes.
5.
In a small bowl, whisk together soy sauce, rice vinegar, ginger, and garlic. Pour over the vegetable mixture and stir to combine.
6.
Add the cooked soba noodles to the skillet, tossing everything together until well mixed. Season with salt and pepper to taste.
7.
Serve warm or chilled as a salad.

1 tablespoon rice vinegar

1 teaspoon ginger, grated

1 teaspoon garlic, minced
13.
Salt and pepper to taste
