Chipotle - sofritas brown rice black beans salsa guacamole sour cream cheese drink

Your Chipotle meal with sofritas brown rice black beans salsa guacamole sour cream and cheese sounds delicious! The black beans are a great source of fiber which will help keep you feeling full. The guacamole made from avocados adds a bit of healthy fats to your meal. Good job Christine!

Instructions

  • 1.

    In a skillet, heat olive oil over medium heat. Add crumbled tofu and cook for about 5 minutes until slightly golden.

  • 2.

    Stir in chili powder, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.

  • 3.

    In a large bowl, combine cooked brown rice, black beans, corn, red onion, and cilantro. Mix well.

  • 4.

    To assemble, place a generous scoop of the rice and bean mixture on a plate, top with the sofritas, and add salsa, guacamole, Greek yogurt, and cheese.

  • 5.

    Serve immediately and enjoy your healthy sofritas taco!

    1/2 cup plain Greek yogurt (for sour cream alternative)

    1/2 cup shredded low-fat cheese

  • 9.

    1/4 cup red onion, diced

  • 10.

    1/4 cup fresh cilantro, chopped

  • 11.

    1 tablespoon olive oil

  • 12.

    1 tablespoon chili powder

  • 13.

    1 teaspoon cumin

  • 14.

    Salt and pepper to taste
