Instructions

In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, Greek yogurt, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined (5 minutes).

Spread the mixture evenly on 4 slices of whole wheat bread (2 minutes).

Top with the remaining slices of bread to form sandwiches (1 minute).

Heat a non-stick skillet over medium heat. Cook each sandwich for about 3-4 minutes on each side, or until golden brown (8 minutes).
5.
Remove from heat, slice in half, and serve with cucumber slices on the side (2 minutes).
