Instructions
1.
In a skillet, cook the lean ground beef over medium heat until browned, about 7-10 minutes. Season with salt and pepper.
2.
While the beef is cooking, prepare the salad by combining fresh spinach, diced tomato, onion, and green pepper in a large bowl.
3.
Once the beef is cooked, drain any excess fat and let it cool slightly.
4.
Top the salad with the cooked beef and drizzle with low-fat sour cream or dressing.
5.
Toss gently to combine and serve immediately.
